Super Bowl Brisket Tacos + Skinny Margarita Recipe

The upcoming game day deserves a touchdown-worthy menu! The Football Bettys bring it home with these Super Bowl brisket tacos and a skinny, spicy margarita to wash it all down. The upcoming Super Bowl in Houston, Texas inspired us to create an upscale Tex-Mex menu! We embraced Mexican culture and cuisine that any football fan going to the Super Bowl in Houston will enjoy. Plus… TACOS. Who doesn’t love them?!

We started at 4am prepping the smoker so it was all ready for the dry rubbed brisket. The rub was given to us by a Texas native and we smoked the meat over pecan wood for almost 12 hours. We achieved the gorgeous, tell-tale ‘smoke ring’ BBQ pros would recognize and appreciate.

Our smoked brisket tacos are topped with tangy homemade pickled red onions, salty cotija cheese, fresh cilantro, and of course a squirt or two of lime. And don’t forget the fresh flour tortillas!

Smoked Brisket Tacos

Ingredients

Tortillas from your local carniceria
Dry Rub Brisket smoked on a smoker cut in pieces
Pickled Red Onions
Cotija cheese crumbled on top also from the carniceria
Cilantro for garnish

Quick Pickled Onions
Ingredients:
1/2 cup apple cider vinegar
1 tablespoon sugar
1 1/2 teaspoons kosher salt
Red onion, thinly sliced

Preparation:
Whisk first 3 ingredients and 1 cup water in a small bowl until sugar and salt dissolve. Place onion in a jar; pour vinegar mixture over. Let sit at room temperature for 1 hour. Can be made 2 weeks ahead. Cover and chill. Drain onions before using.

We served Shiner Bock Beer (made in Shiner, Texas) and spicy skinny margaritas. Lots of fresh lime juice, a few jalapeño discs, a bit of agave nectar and a shot of Casamigos Reposado tequila makes our margaritas tangy and refreshing. The black and white straw, along with the green hue of the margarita, is perfect for game day!

Fresh Lime & Jalapeno Skinny Margarita

Ingredients:
1/2 cup fresh-squeezed lime juice (no exceptions!)
1/2 large green jalapeno pepper, sliced thin
4 ounces silver tequila (we used CASAMIGOS BLANCO)
2 tablespoons sea salt
1 lime slice for garnish

To make a football lime:
Use an OXO ® Citrus Zester (found at Crate and Barrel) and carve out the lines for your football!

Overall, this upscale Tex Mex shoot gets to the heart of the matter – when Super Bowl comes around, football fans want good food. Game day hosts can follow these recipes and serve up their own Tex Mex, because on February 5th, we’ll all be craving some of that famous Texas BBQ!
