Ingredients:

  • 12 oz Dry Pasta of Choice
  • 3 cups Pasta Sauce
  • 2 ½ Water
  • 1 small Onion (diced)
  • 3 cloves Garlic (minced)
  • Veggies (We chose tomatoes, mushrooms, zucchini, and spinach but feel free to swap in whatever you have on hand!)

How To:

  1. Add the Pasta. Place the dry pasta in a large pot or deep pan, spreading it out evenly on the bottom.
  2. Add the rest of the ingredients. Pour in the pasta sauce and water, then add the onion, garlic, and vegetables. Give everything a gentle stir to combine.
  3. Bring to a boil. Place the pot over medium-high heat and bring the mixture to a boil.
  4. Simmer until tender. Once boiling, reduce the heat and let it simmer, stirring occasionally, until the pasta is al dente and the liquid has reduced into a saucy consistency.
  5. Taste, adjust seasoning if needed, and serve warm. Enjoy your cozy, veggie-packed dinner – plus the joy of only one pot to clean.

Ingredients:

  • (4) Salmon Fillets
  • 1lb Red Potatoes (halved or quartered if large)
  • 12 oz Fresh Green Beans (trimmed)
  • ¼ cup Italian Dressing (divided)
  • (1) Lemon (halved, plus optional slices for roasting)
  • Salt & Black Pepper (for taste)

How To:

  1. Preheat the Oven. Preheat your oven to 400 degrees fahrenheit. Line a rimmed baking sheet with parchment paper or foil if desired.
  2. Roast the Potatoes. Place the potatoes in a large bowl. Drizzle with 2 tbsp Italian dressing and season with salt and pepper. Toss to coat evenly. Arrange the potatoes cut-side down on the baking sheet and roast for 20-25 minutes, or until fork-tender.
  3. Prep the Green Beans. While the potatoes roast, add green beans to the same bowl. Drizzle with 2 tablespoons Italian dressing, season with salt and pepper, and toss to coat.
  4. Add Salmon and Green Beans. Once the potatoes are tender, remove the baking sheet from the oven and switch the oven to broil (high). Push potatoes slightly to the sides and place salmon fillets in the center. Add green beans around the salmon. Drizzle the remaining 1 tbsp Italian dressing over the salmon and season with salt and pepper.
  5. Add Lemon & Broil. Squeeze lemon halves over the entire pan. If desired, slice the lemon and place slices on the baking sheet. Broil for 8-10 minutes, or until the salmon is opaque and flakes easily with a form, and the veggies are lightly browned.
  6. Serve & Enjoy. Serve warm with extra lemon wedges or tartar sauce, if desired.

Ingredients:

  • 12 oz cauliflower gnocchi from Trader Joes (frozen or fresh/thawed)
  • 3 tbsp unsalted butter
  • ⅓ cup heavy cream
  • ¼ cup finely grated parmesan cheese (+ more for topping)
  • 2 lemons (zest freshly grated)
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 2 tbsp fresh herbs (basil or parsley, finely chopped)

How To:

  1. Brown the Gnocchi. Heat the butter in a large nonstick skillet over medium heat. Once melted and bubbling, add the cauliflower gnocchi (frozen or thawed) in an even layer. Cook 2-3 minutes without stirring until the bottom is golden brown. Flip and cook another 2-3 minutes, until both sides are golden and the gnocchi is heated through.
  2. Create the Sauce. Reduce heat slightly and pour into the heavy cream. Add lemon zest, salt, and black pepper. Stir gently to combine.
  3. Add the Parmesan. Sprinkle in the parmesan cheese and stir until melted and creamy. The gnocchi will absorb some of the sauce, creating a rich, silky texture.
  4. Finish & Serve. Taste and adjust seasoning as needed. Remove from heat and top with fresh herbs and extra parmesan. Serve warm.

Ingredients:

Caprese Panini

  • (4) slices of Sourdough Bread
  • 6 oz Fresh Mozzarella (sliced)
  • (2) Roma Tomatoes (sliced)
  • 1 cup Arugula
  • ¼ cup Fresh Basil Leaves
  • ¼ Basil Pesto
  • 2 tbsp Unsalted Butter (softened)
  • Salt & Black Pepper (to taste)

Balsamic Glaze

  • 1 cup Balsamic Vinegar
  • 1 tsp Honey

How To:

  1. Make the Balsamic Glaze. In a small saucepan over medium heat, add the balsamic vinegar and honey. Bring to a gentle simmer and cook until reduced by about half, 8-10 minutes. Lower the heat if needed to avoid boiling. The glaze should be thick enough to coat the back of a spoon. Remove from heat and set aside to cool.
  2. Prep the Bread. Butter one side of each slice of sourdough. Flip the slices over and spread about 1 tbsp pesto on the unbuttered side of each slice.
  3. Assemble the Sandwiches. With the pesto side facing up, layer arugula, basil, tomato slices, and mozzarella. Season lightly with salt and pepper and drizzle with 1-2 tsp balsamic glaze. Top with the remaining bread slices, making sure the pesto sides face inward.
  4. Grill the Panini. Heat a panini press or grill pan over medium heat. Grill the sandwiches until the bread is golden and crisp and the cheese is fully melted, 3-5 minutes per side (or until pressed and melty).
  5. Serve & Enjoy. Slice in half and serve warm with extra balsamic glaze drizzled on top, if desired.

Recipe via: Gimme Some Oven

Ingredients:

  • 1 lb uncooked Pasta (we recommend mezze rigatoni!)
  • 2 ½ cups Broccoli Florets
  • 1 cup fresh basil leaves (tightly packed)
  • 1 cup freshly-grated Parmesan cheese
  • ⅓ cup Toasted Pine Nuts or Slivered Almonds
  • 1 lg handful Fresh Baby Spinach
  • 2 lg Cloves Garlic
  • 1 lg Lemon (about 1 tbsp zest, 3 tbsp juiced)
  • ½ tsp Fine Sea Salt
  • ½ tsp Freshly Ground Black Pepper
  • ½ cup Extra-Virgin Olive Oil

How To:

  1. Boil the Water. Bring a large pot of generously salted water to a rolling boil over high heat.
  2. Cook the Broccoli. Add the broccoli florets to the boiling water and cook for 3-minutes, or until tender and bright green. Using a slotted spoon or spider strainer, transfer the broccoli directly to a food processor, keeping the water boiling for pasta.
  3. Cook the Pasta. Add the pasta to the same pot of water and cook until just al dente, according to package instructions.
  4. Make the Broccoli Pesto. To the food processor with the broccoli, add basil, Parmesan, pine nuts, spinach, garlic, lemon zest, lemon juice, salt, and pepper. Pulse to combine, then slowly drizzle in the olive oil until smooth. Scoop out ¼ cup starchy pasta water and add it to the pesto. Pulse again until ultra-creamy. Add more pasta water if needed to reach your desired consistency.
  5. Toss the Pasta. Before draining the pasta, reserve an additional ½ cup starchy pasta water. Drain the pasta and return it to the pot. Add the broccoli pesto and toss to coat. If the sauce seems thick, add reserved pasta water a little at a time until silky and evenly coated.
  6. Serve & Enjoy. Serve warm, topped with extra Parmesan and freshly crackled black pepper.
