The Colony Hotel, tucked into Palm Beach, FL, and lovingly dubbed the “Pink Paradise,” is as iconic as it is charming. With its signature pastel palette, playful spirit, and timeless elegance, it’s no wonder this South Florida gem was the perfect backdrop for Collin’s milestone celebration.
The Design
“There’s just something about a layered table that speaks to my soul,” Michelle shares. And this one, full of texture, depth, and warmth, quickly became a forever favorite. The party scene was set amidst the East Garden of The Colony Hotel, complete with serpentine tables, creating an elegant tone for the night. “They added instant flair and intimacy,” she explains. “Little nooks and crannies that encouraged conversation and connection.”
From stacked plates and custom menus to glowing gold lamps, black taper candles, and lush florals, every layer was intentionally designed. As the evening unfolded, the table became a living, breathing part of this celebration.
The Guest of Honor
At the heart of the celebration was Collin Pierson, the birthday guy, Michelle’s husband, and the one who is usually behind the camera capturing life’s biggest moments. This time, though, the lens turned toward him.
Known for his love of storytelling through photography (and his obsession with watches and Porsches), Collin’s 40th was a perfect blend of everything he loves: great food, great wine, unforgettable music, and the people who mean the most.
The Drinks & Bites
While guests arrived and mingled in the garden, the evening kicked off with champagne and bites. Dom Pérignon flowed, alongside signature cocktails, the Royal Palm Paloma and the Americano, that added a personal touch to the pre-dinner mix.
A Palm Beach-style appetizer station set the tone: elevated fish & chips and an indulgent caviar bar complete with Siberian-Altima caviar, créme fraîche, lemon, brioche sliders, and house-made potato chips.

As the night continued, one of the most memorable elements became the music. “Yacht rock all night long!” Michelle recalls. “Not just background music. Guests were singing, laughing, and reminiscing. And by guests, I absolutely mean me too!”.
