Healthy Taco Bowls with Broccoli Rice

Prepare to drool over these healthy taco bowls from Lindsay at Weeknight Bite! Made with broccoli rice and all other healthy ingredients, they are a guilt-free Mexican food option – anyone else always crave Mexican food?!  Plus, you probably already have these ingredients in your fridge, so they will be extra easy to whip up when the craving hits. Also, don’t think we forgot about Cinco de Mayo! Now, you can prepare to celebrate this Friday with the perfect dish!

Ingredients (serves 3-4)

For the Broccoli Rice:
1 bag of Trader Joe’s Riced Broccoli (or 1 head of broccoli, pulsed through food processor)
1 tbsp extra virgin olive oil
2 cloves garlic, chopped
1/2 cup salsa verde
1/2 red onion, diced
Salt & pepper to taste

For the bowls:
Organic rotisserie chicken, shredded
2 tbsp of your favorite salsa
1/2 tsp chili powder
1 can black beans, drained and rinsed 
1 red or yellow bell pepper, sliced into strips
1/2 red onion, thinly sliced
1 tbsp extra virgin olive oil
Freshly shredded monterey jack cheese
Avocado, fresh cilantro, extra salsa & lime juice for garnish
Salt & pepper to taste



Directions

1. Heat olive oil in a pot until hot but not smoking. Add chopped onion sauté a few minutes until softened. Add garlic and cook for one more minute until fragrant.
2. Add riced broccoli and salsa verde and mix well. Season with salt and pepper. Sauté until heated through. Divide into bowls.
3. In the same pan, heat olive oil, and sauté bell pepper and onions until softened. Add to broccoli rice bowls.
4. Mix shredded rotisserie chicken with salsa and chili powder for some extra flavor. Add to broccoli rice.
5. Add black beans, shredded cheese, avocado, and cilantro. Squeeze lime juice and serve with extra lime wedges.
