St. Patrick’s Day Recipes: From A Stout Float to Corned Beef Sliders

St. Patrick’s Day is more than just leprechauns and lucky charms! It’s all about the food and drink the Irish fancy, too! Thankfully, 24 Carrots Catering whipped up a delicious savory menu to enjoy this holiday. Lucky for us all, St. Paddy’s day falls on a Sunday this year, so you can take part in the festivities and enjoy the delicacies all weekend long! Make a stout float, or corned beef sliders, or lucky charms ice cream, or all of these St. Patrick’s day recipes to ensure your own party is as good as gold!

Corned Beef & Pickled Cabbage Slider on a Pretzel Roll

Pickled Cabbage

Ingredients:

2 cups seasoned rice vinegar
1 teaspoon salt
1 teaspoon sugar
1 tablespoon pickling spice
¼ head green cabbage julienne

Directions:

Bring up to a simmer the first 4 ingredients, pour hot liquid over julienned cabbage. Cover cabbage and refrigerate overnight. Cabbage is ready next day.

St. Patrick's Day Recipes, corned beef sliders

Corned Beef

Ingredients:

1ea Brisket 12 to 14lb

Pickling spices:

1 Tbsp whole allspice berries
1 Tbsp whole mustard seeds (brown or yellow)
1 Tbsp coriander seeds
1 Tbsp red pepper flakes
1 Tbsp whole cloves
1 Tbsp whole black peppercorns
9 whole cardamom pods
6 large bay leaves, crumbled
2 teaspoons ground ginger
1/2 stick cinnamon

Brine:

1 gallon water
2 cups Kosher salt
5 teaspoons pink curing salt*
3 Tbsp pickling spices
1/2 cup brown sugar

Directions:

1. Brine brisket for 5 to 7 days under refrigeration, once brined wash under cold water.

2. Place brisket in a large pot and cover with water, now add the pickling spices and place pot on stove. Heat on high until boiling, once boiling cook for 3 to 4 hours or until brisket is tender.

3. Toast pretzel rolls, top with corned brisket, pickled cabbage, and enjoy!

Don’t forget the cocktails! Serve up beer shooters and these stout floats for a true taste of Ireland!

Stout Floats

Ingredients:

1 scoop Vanilla Ice Cream
4 oz Chocolate Stout (We recommend Rouge)

Directions:

Pour over and enjoy!

Lucky Charms Ice Cream

Ingredients:

4 cups Lucky Charms cereal
2 cups heavy cream
2 cups whole milk
2 cups granulated sugar
6 egg yolks

Directions:

1. Crush half of cereal and separate.

2. Boil cream, milk, and half of sugar.

3. Whisk together second half of sugar and egg yolks. Temper cream mixture into yolks. Bring back to stove and cook for an additional 2 minutes. Chill overnight.

4. Run through ice cream machine. As ice cream comes out of machine, add crushed cereal and then whole pieces. Freeze for at least an hour before service.
