Cold Press Vanilla Creme Iced Coffee Recipe

Any chance you suffer from a sour stomach when you drink too much coffee?  Cold brew might just be your new best friend. Cold pressed coffee is a smoother, sweeter and less acidic due to the process of soaking the grounds without heat. All coffee is acidic due to the processing of the beans but since cold brew isn’t produced with hot water the taste is all flavor.

Here’s a few tips from our resident health expert, Be Well by Kelly:

If you need an afternoon pick me up (or a second coffee) replace your pm drink with cold brew. If you are an iced coffee fan, always choose cold brew. You save yourself all the acid. If you want to make a Coffee flavored #bewellsmoothie pour your cold brew into an ice cube tray and add a few cubes to a vanilla protein smoothie.

 

Almond Milk Ingredients

1 cup raw almonds, preferably organic
2 cups water, plus more for soaking
Vanilla
Blender
Fine-mesh nut bag or cheesecloth

Place the almonds in a bowl and cover with about an inch of water. They will plump as they absorb water. Let stand, uncovered, overnight or up to 2 days. The longer the almonds soak, the creamier the almond milk.

Drain the almonds from their soaking water and rinse them thoroughly under cool running water. Place the almonds in the blender and cover with 2 cups of water. Blend at the highest speed for 3 – 4 minutes. The almonds should be broken down into a very fine meal and the water should be white and opaque. Optional: Add ½ tsp. of vanilla and pulse to blend. If you want sweetened almond milk add a few drops of liquid stevia and pulse for a few more seconds to blend. Pour nut and water mixture through a nut bag or cheesecloth, and capture liquid in a bowl or carafe. Repeating this process will make your milk smooth and consistent.

Cold Brew Coffee Ingredients

1/3 cup whole coffee beans
1 1/2 cups cold water, preferably filtered
Coffee grinder (or use ground coffee)
French press

Instructions

Grind 1/3 cup of coffee beans until they are between medium and finely ground. Pour the ground coffee into the French press and top with 1 1/2 cups of water. Gently stir the coffee with the water until well blended. Carefully add the lid in the up position. Place the French press in the refrigerator and steep overnight. In the morning, plunge the lid and pour. Consider doubling this recipe with a big French press and keeping the coffee for 2-3 days.

Fill a glass with ice cubes and fill halfway with coffee and slowly add vanilla crème almond milk. Stir and enjoy!

Note: Cold pressed brew can be smoother and stronger, be careful of caffeine intake!
