Ever since I got married I’ve been nesting into my home and my new wife life. With wedding planning craziness of the past, I’ve had a lot more time to spend in the kitchen and I love it! I’ve tried a lot of recipes and cookbooks and during my exploration I’ve become obsessed with all things Barefoot Contessa. My absolute favorite food guide is her Back to Basics cookbook. I enjoy hosting, having dinner parties and entertaining with friends using some of her fabulous recipes – they’re always big hits! Check our her weekly show on the Food Network for more tasty dishes!

Here’s my absolute favorite recipe that I’ve made so far!

Baked Shrimp Scampi

2 pounds (12 to 15 per pound) shrimp in the shell
3 tablespoons good olive oil
2 tablespoons dry white wine
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallots
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
Lemon wedges, for serving

We have a beautiful, fresh wedding by Hugh Forte taken place at the luxurious St. Regis in Dana Point, CA. Hugh did a fantastic job of capturing just what the couple wanted! Here’s what the bride had to say about her big day “Our inspiration for the theme of the day was all white, clean, classic, comfortable anthropology. We wanted to make a statement with textures rather than color. We used little vintage touches, organic looking flowers, burlap, greenery, wood and fun to achieve our look.” We think they did a fantastic job!

Like most of you, when I get a new issue of Martha Stewart in the mail I’m glued to it cover to end! I don’t know how they manage to pull it off, but each issue leaves me inspired by something and the latest issue of MS Living was no exception. There was an article about the “art of doing nothing” that caught my eye because reading it was a revelation. Sometimes doing nothing is GOOD for you! How backwards does that sound to us? We’re always pushing ourselves to better our business, use every working minute of the day we can, and are often telling people we wish there were more than 24 hours in a day so we can accomplish more. Phew! I don’t know about you, but just hearing talk like that wears me out! No wonder businesses are burning out, the expectations are so high! Of course it’s important to work hard and chase goals, but let’s remember how important doing nothing sometimes is too. Quite moments of nothingness and reflection are vital because it’s a chance to focus on what it is you really want to get out of your job. We’re cluttered by our day to day activities and going through motions of what needs to get done that we never get a chance to sit and think and imagine. What do I want to be doing? What new avenues should I explore? How can I better myself and my business? Our “go go go!” mentality doesn’t leave room for reflection and will eventually damage us in all kinds of ways. Down time is healthy for your mental health as well as your physical health! We get so caught up in creating success for our businesses we don’t realize the stress we’re putting on ourselves and we forget how important a healthy mind and body are for maintaining that success. Relaxing and down time are vital to the growth of our businesses and we should all remember to slow it down once in a while. Especially with only a few weeks of summer left… let’s enjoy it while we can!

I love it when brides and grooms are captured having FUN! It makes me wish I were at that party! I was inspired by Snippet and Ink’s guest post about Love and Laughter that she did while I was away on my honeymoon. My wedding was an amazing day, but what I really took away from it was how much fun my husband and I had. So kudos to the brides and grooms who let loose and fill their wedding day with laughter!

You’ve seen our love for confetti, hearts, and buttons, so you know that we love all the fun elements of weddings! Balloons are another one of our favorites. They seemed a little too trendy for a while but we still love the pop of fun and color they give to any wedding! Whether they are hung from posts, or released after the kiss, it is a fun way to mark a celebration! And as Cleveland from Family Guy once said, “In case you didn’t know, a balloon tied to a mailbox is an international symbol for party over here!”

We are so happy to have this sweet engagement shoot from James Christianson  Trivium Studio. Jenn and Chris are getting married this Saturday at the Oldest Gothic Church in the Nation “Historic St. Luke’s Church.” I’m sure it will be beautiful, it’s planned by one of my clients Antonia Christianson Events! Sometimes we get all caught up in the hype of props and diy elements that it is really refreshing to just see a simple couple in love! Jenn and Chris met through his Best Friend (and best man) Tyler Stone who also happens to be Jenn’s cousin. She was visiting her family in Florida when she met Chris. A weekend of flirting turned into trip for him back to Virginia where she lived, only a few weeks later. Jenn grew up a military brat and is quickly transitioning into a military wife. Chris is a Surface Warfare Officer in the Navy and recently graduated from Officer Candidate School. Such a sweet love story!

I’ve been a California girl my whole life and have spent a large portion of my life on the beach. And now, with an office just 2 blocks from the beach I know I am truly blessed!  There’s nothing like the salty breeze on your skin and the sand between your toes. Especially TODAY. It’s a scorcher here in Southern California. Finally feels like true summer weather!

For all the couples that got to spend their special day at the beach, it must have been such a treat!! What a beautiful and calming experience to begin your life together one on of earth’s most exquisite gifts is truly a blessing!

Who knew little circles of paper and strips of ribbon could add so much to a wedding?! Confetti sprinkles a perfect pop of color and fun – not to mention it makes for a great photo! It’s one of my favorite things to toss on the bride and groom as they make their grand exit!

“I left my heart in San Francisco”!! It is my second home -  it was the city where I gained independence when I moved there to go to college. I even had a bridal shower up there! San Fran is such a great city, so full of culture and diversity. It’s the perfect backdrop to capture any couple on their big day! With Golden Gate Bridge, beautiful skyline and famous landmarks what more could you ask for?!

“The grass is always greener on the other side…” I don’t know how many times I’ve heard this expression! But these simple words hold such great meaning when you really think about it. It seems it’s human nature to want something someone else has, but when we do that it’s easy to forget all that we have. Sometimes the product of all our hard work goes unnoticed; we’re so involved with our businesses we forget to appreciate our accomplishments. I was talking with my husband today and brought up all these things I wanted to be doing and accomplishments I wanted to achieve because I was feeling stagnant. He graciously reminded me of all that I HAVE accomplished, which ironically was everything I had in mind when I started Be Inspired PR. I’m the type of person that is always pushing for better, dreaming for something bigger and setting goals that sometimes seem impossible. While all that is necessary for a business to continue to grow, we need to take time to appreciate how far we’ve come! For you, it may be frustrating if someone has more blog comments, more clients, more twitter followers or higher traffic on their website. That doesn’t mean we need to go chasing after someone else’s grass!

We all have so much to be proud of and if we take time to remember that it will fuel our drive far more than someone else’s accomplishments will! A positive and optimistic attitude will take us much farther than envy and jealousy. So while someone else may seem to have greener grass, remember all the blood, sweat and tears that went into yours!
