She’s sharing this fresh and delicious pack ahead salad that’s perfect to take to work or for a healthy lunch when you’re on the run!
Kara says, There are so many times when our weeks start off packed full to the brim. Thinking ahead about your lunches can offer a great way to relieve a little bit of stress from your work week, and add a little health to your lunching hour. I love packing salads on Sunday, taking the time to intentionally think about how I am going to nourish myself in the coming week. These pack ahead salads are so simple, and a great way to take care of your body in any busy season. Plus, they’re so beautiful and so fun!
The best part about a pack ahead salad is you can make it completely your own. Fill it with ingredients you love, and try adding various dried fruits, nuts, or seeds to give it a little extra crunch and a few more nutrients.
One of my go-to packaheads is a smoked salmon and arugula salad. After making lox bagels over the weekend, this salad is a great way to use that leftover salmon for a delicious, protein packed salad.
Smoked Salmon Pack Ahead Salad
Ingredients (makes 2!)
4 cups arugula
1⁄2 cucumber, chopped
1 avocado, chopped
wedge of citrus (I used orange)
2 boiled eggs
1 chopped apple
1⁄4 cup pistachios
2 tbsp pumpkin seeds
dressing of choice
Step 1: Drizzle your avocado and apple with some citrus juice to keep them from browning.
Step 2: In 2 large weck jars or a large mason jars, add your arugula.
Step 3: Top with remaining ingredients, and drizzle with your dressing of choice. If you’re eating the salad a few days later, hold off on dressing until the day of.
Pack your salad for work and you’ve got a perfect lunch on the go!
